Chef Eric Osley is a graduate of the California School of Culinary Arts and the Sushi Chef Institute in Little Tokyo. Chef Osley has worked for many of the top restaurants in Los Angeles. He has won medals in culinary competitions. Chef Osley has worked with many top chefs such as Alice Waters, Jacques Pepein, and Julia Childs. He was named a "Star Chef" in 2004 by the Rosemary Foundation.

Chef David Edens is a graduate of the California School of Culinary Arts. His experience includes work at Pinot Blanc and Dickenson's West Catering. He joined Five-Sixty-One's team in 2002. Chef Edens's specialty is French Cooking as well as crafting Seasonal and Tasting Menus.

Instructor Andrew M. Grani is a graduate of California State Polytechnic University, Pomona. Instructor Grani is the manager of Five-Sixty-One and joined the team in 2003. He has 19 years of experience in restaurant business in the Candlelight Pavilion Dinner Theater.
